Short answer
For the summit, go from mid-June to early October, when the high trails are usually free of snow; July and August are warmest in town (about 29°C) and busiest. May and October, with highs of about 18–20°C, are lovely for the gorge and Dion, but snow can remain high up.

Spring (Mar–May)
Highs rise from about 10°C in March to 20°C in May, with 7–13 rainy days a month; good for the gorge, but snow covers the high peaks.
Summer (Jun–Aug)
Highs of about 25°C in June and 29°C in July and August in town, with few rainy days; the main summit season, though afternoon storms happen on the mountain.
Autumn (Sep–Nov)
About 23°C in September and 18°C in October, with about 8 rainy days a month, then 15°C and wetter in November; early autumn is excellent for hiking.
Winter (Dec–Feb)
Highs of about 9–11°C and lows of 2–4°C, with 8–14 rainy days a month; the high mountain is snow-covered and only for experienced, equipped climbers.

When to avoid
Avoid the summit from November to May unless you are an experienced winter climber, because of snow and ice. In July and August, refuges and Prionia parking fill on weekends, so book early or go on weekdays.
