Short answer
May, June, September and early October are best, with highs of about 24–30°C and warm sea. July and August are hot (about 32–33°C) and very crowded; winter is mild at about 14–16°C, ideal for cycling and hiking, but many coastal hotels close.

Highs rise from about 17°C in March to 24°C in May, with 7–10 rainy days; good for hiking, though the sea is still cool until late May.
Summer (Jun–Aug)
Hot and dry: highs of about 30–33°C and only 3–5 rainy days. Peak crowds and prices, especially in August.
Autumn (Sep–Nov)
September (about 28°C) and October (about 24°C) bring a warm sea and fewer people, but September can bring storms (about 12 rainy days); November cools to about 18°C.
Winter (Dec–Feb)
Mild days of about 14–16°C, lows around 5–8°C, almond blossom in February; quiet, with many coastal hotels closed.

When to avoid
