Street food, sit-down or a cooking class?
Street food
Street food is breakfast phở and bánh mì, lunchtime rice and noodle shops, and evening snail and grill stalls in Ninh Binh city. Tam Coc has fewer genuine street stalls than the city because so much is aimed at visitors.
Sit-down meals
The Ninh Binh meal is a shared spread at a goat restaurant: several goat dishes, cơm cháy, vegetables and rice wine, ordered for the table. Lunch is early (from about 11:00) and dinner from about 17:30–19:00; local restaurants empty out by 21:00.
Cooking classes
Some homestays and small operators around Tam Coc offer cooking classes, often with a visit to a local market or garden, making spring rolls, cơm cháy or noodle dishes. Check whether pick-up is included, since places are spread out.

Vegetarian, halal and gluten-free
Vegetarian & vegan: Possible but needs effort. Goat and meat stocks dominate local dishes, and fish sauce is in almost everything, including dips and dressings. Traveller restaurants in Tam Coc have vegetarian menus; in local places say 'tôi ăn chay' (I eat vegetarian) and ask for 'không nước mắm' (no fish sauce).
Halal: No halal infrastructure. Goat is common, but meat is not slaughtered to halal standards and pork is widely used. Vegetable and seafood dishes are the practical option.
Gluten-free: Rice is the base of most dishes, which helps, but soy sauce, oyster sauce and some marinades contain wheat, and bánh mì is wheat bread. Plain rice, phở and grilled dishes are usually the safer choices; there is little awareness of coeliac disease.
Food scams and tourist traps to avoid
- Goat restaurants without prices on the menu, or a set menu priced per person that turns out to be per dish. Ask for the price of each dish or the set before ordering and confirm whether it is per person or per table.
- Boat rowers on the Tam Coc trip pushing you to buy drinks and snacks from floating vendors for them, at inflated prices. Bring your own water and snacks, politely decline, and tip the rower directly if you want to.
- Seafood or snails priced by weight with the weight decided after cooking. Agree the weight and price before it goes in the pot.

What should I eat in Ninh Binh?
