The 3-day plan, day by day

Day 1: Balloon flight and the Göreme Open-Air Museum

Morning. Take a hot-air balloon flight at sunrise (about €150-300 per person depending on the season and basket size; pick-up around 4:30-5:30). About 100-150 balloons rise over the valleys on good days. If you do not fly, watch them from the hill above Göreme for free.

Afternoon. Visit the Göreme Open-Air Museum (UNESCO), a monastic complex of rock-cut churches with Byzantine frescoes from the 10th-12th centuries. The Dark Church (Karanlık Kilise), with the best-preserved paintings, needs an extra ticket.

Afternoon. Walk in the Ihlara Valley (about 1-1.5 hours away), a canyon 100 metres deep along a river, with rock-cut churches, then visit the Selime Monastery, a huge cathedral carved into the rock.

Evening. Return for a last evening in Göreme, or a Turkish night show with dinner.

'Green Tour' day trips (about €45-65) combine an underground city, Ihlara and Selime with transport and lunch.

Getting around

Fly to Kayseri (about 1 hour away) or Nevşehir (about 40 minutes) and take a shuttle to your hotel. Rent a car or scooter, join day tours, or use local buses between Göreme, Uçhisar, Avanos and Ürgüp. Many valley walks start from Göreme on foot. Overnight buses come from Istanbul (about 10-11 hours).

What to eat in Cappadocia

Central Anatolian food is hearty: testi kebab (pottery kebab), manti (tiny dumplings with yoghurt and garlic butter), gözleme (filled flatbread), kuru fasulye (bean stew) and pide. Is the balloon flight worth the price?

For most visitors it is the highlight of a trip to Turkey. Choose licensed operators with good safety records, and smaller baskets for a better view.

What if my balloon flight is cancelled?

Flights are cancelled by the civil aviation authority when winds are too strong. Operators usually move you to the next morning, which is why staying at least two nights is important.

Göreme for walking access to valleys, restaurants and balloon views; Uçhisar for quieter, more upmarket hotels with panoramic views.

Are underground cities suitable for everyone?
