Short answer

The best months are May, June and September, with highs of 22–28°C, warm sea from June and fewer crowds than midsummer. July and August reach 31–32°C and are the busiest and priciest. Corfu is greener and wetter than the Aegean islands, with 14–17 rainy days in November and January.
