Huế

Huế was Vietnam's imperial capital under the Nguyễn dynasty, and it has its own cooking: spicier than the rest of the country, with lots of shrimp paste, lemongrass and chilli, and a long list of small, delicate rice cakes once associated with the court. The city's best-known bowl is bún bò Huế, a beef and pork noodle soup with a lemongrass and fermented-shrimp broth, and its humblest is cơm hến, rice with tiny river clams from Cồn Hến islet in the Perfume River. Huế is also a Buddhist centre with a strong vegetarian (chay) tradition. Most of this is cheap street and market food, eaten on low plastic stools.

Street food, sit-down or a cooking class?

Street food

Most of Huế's best food is street and market food: noodle soups at breakfast, bánh and clam rice at lunch, nem lụi and chè in the evening. Specialist shops cook one dish all day; follow the crowd and the plastic stools.

Sit-down meals

Sit-down restaurants are mainly for visitors, for imperial-style set menus, or for groups ordering several shared dishes. Locals eat early: breakfast from about 6:00, lunch around 11:00–13:00 and dinner around 18:00–20:00.

Cooking classes

Cooking classes in Huế often include a market visit (frequently Đông Ba or a local market) and teach Huế dishes such as bánh khoái, nem lụi and bánh bèo. Some are held in garden houses outside the centre; check whether transport is included.

Vegetarian, halal and gluten-free

Vegetarian & vegan: Better than most Vietnamese cities thanks to the Buddhist tradition: look for 'chay' signs. In ordinary stalls, almost everything contains fish sauce or shrimp paste, including broths and dipping sauces, so a dish without visible meat is not necessarily vegetarian.

Halal: Halal food is very limited in Huế. Pork is in many local dishes, including bún bò Huế (pork knuckle and pork sausage). Vegetarian restaurants are the safest option for Muslim travellers.

Gluten-free: Rice noodles and rice cakes are naturally gluten-free, but soy sauce and some marinades contain wheat, and bánh mì is wheat. Fish sauce is usually fine. Carry a translated card ('không có gluten'); awareness is low.

Common questions

Is bún bò Huế very spicy?

It is spicier than most Vietnamese soups, but much of the heat comes from chilli oil and fresh chillies on the table, so you control it. The broth has a strong lemongrass and fermented-shrimp flavour. If you're unsure, ask for it 'không cay' (not spicy) and add chilli yourself.

Is street food in Huế safe?

Generally yes, at busy stalls with high turnover. Choose soups that are served boiling hot and specialist shops cooking one dish all day. Be careful with ice in remote places and with raw herbs if your stomach is sensitive. Drink bottled or filtered water, not tap water.

Do I need to tip?

Tipping is not traditional at street stalls and local restaurants. In restaurants used to visitors, leaving roughly 5–10% or rounding up is appreciated. Guides on food tours usually receive a tip, often around 50,000–100,000 VND per person for good service.

When is Đông Ba Market open?

The market operates daily from early morning. The food stalls are busiest in the morning, and many sellers pack up by late afternoon, so go before noon for the best choice. Opening hours vary by section and around Tết (Lunar New Year), when many stalls close for several days.

What is the difference between Huế and Hội An food?

Huế food is spicier, uses more shrimp paste and has many small rice cakes linked to the old court, plus bún bò Huế and cơm hến. Hội An, a few hours south, has its own specialities such as cao lầu and the famous bánh mì shops. If you visit both, try each town's dishes locally.

How much should I budget for food?
